Cauliflower Gnocchi Caprese Salad

I was heading to my parents house for a barbecue and I wanted to make something a little different.

(One of my past times is tricking my family into eating healthy things).

I was going to do a chickpea pasta salad but I decided to experiment with Trader Joe’s cauliflower gnocchi and it did NOT disappoint.

I made the cauliflower gnocchi in my air fryer and let me tell you… it’s a total game changer. It comes out perfectly browned and crunchy and not nearly as mushy as it does if you make it in a pan (though that’ll still work!).

I used my Skinny Basil Pesto recipe here but you could always use something store bought (but read the ingredients, pesto can be super high in calories, more on that here….)

Cauliflower Gnocchi Caprese Salad

Serves: 10

Ingredients:

Directions:

  1. Prepare cauliflower gnocchi in the air fryer. Preheat your air fryer to 390 degrees F for 3 minutes. Cook the cauliflower gnocchi in the air fryer for 10 minutes, shaking the basket halfway through. (Note: If you do not have an air fryer, prepare the cauliflower gnocchi according to the directions on the package.

  2. Add the cooked cauliflower gnocchi, cubed mozzarella and tomatoes to a large bowl.

  3. Add Alix’s Skinny Basil Pesto to the bowl and mix well to coat the vegetables.

  4. Drizzle with balsamic glaze and garnish with fresh basil.

NOTES:

  • This salad can be served cold or hot.

  • 1 serving= ~1 cup of salad
