Crunchy Asian Slaw

Crunchy Asian Slaw

Serves: 12

Ingredients:

  • 1/4 cup slivered almonds

  • 1 package Ramen Noodles, (discard flavoring)

  • 8 Cups Coleslaw Mix

  • 6 stalks green onion, chopped

  • 1.5 cups shelled edamame

  • 1/2 mango, diced

  • 1 red bell pepper, sliced

  • 1/4 cup fresh cilantro, chopped

For the dressing:

  • 2 tbsp olive oil

  • 1 tsp sesame oil

  • 2 tbsp low sodium soy sauce

  • 1/4 cup rice wine vinegar

  • 1 tsp sesame seeds

Directions:

  1. Preheat oven to 350 F. Spread the ramen noodles (without seasoning packet) and almonds on a baking sheet. Bake for ~5 minutes until they begin to brown. Remove baking sheet from oven.

  2. Combine coleslaw mix, green onion, edamame, mango, bell pepper and cilantro in a large bowl. Toss to combine.

  3. In a separate bowl, combine all dressing ingredients. Whisk to combine.

  4. Top salad with ramen noodles and slivered almonds.

  5. Dress salad and serve immediately for best results!

NOTES:

  • The salad can be kept as leftovers but keep in mind that the noodles will lose their crunch!

  • If you want to save the slaw for the next day, keep the dressing on the side.
