No Bake Pumpkin Spice Energy Balls

I love a good no bake recipe. Especially one that takes <10 minutes to make and can last in the refrigerator for 5 days. Perfect for meal prep!

I’ve been loving adding these into my yogurt as a snack or just having two before a workout.

Alot of energy ball recipes use honey as a sweetener but I used NuNaturals NuStevia Pumpkin Spice Syrup instead which keeps the carbs and sugar super low.

No Bake Pumpkin Spice Energy Balls

Serves: 26

Ingredients:

  • 1/4 Cup Powdered Peanut Butter (Mixed with equal parts water)

  • 1.5 Cups Dry Old Fashioned Oats

  • 1/2 Cup Pumpkin Puree

  • 1/4 Cup Chia Seeds

  • 1 TBSP NuNaturals NuStevia Pumpkin Spice Syrup

  • 1 tsp Vanilla Extract

  • 1/2 tsp Pumpkin Pie Spice

  • 1/2 Cup Lily’s Chocolate Chips

Directions:

  1. In a medium bowl, prepare peanut butter by mixing powdered peanut butter with water. Set aside

  2. Combine all other ingredients into a large bowl. Add peanut butter mixture.

  3. Using a spoon, mix all ingredients until well combined.

  4. Use a tablespoon to form 26 balls.

  5. Refrigerate for ~1 hour before eating.

NOTES:

  • These can be stored in the refrigerator for ~5 days.

  • If you don’t have chia seeds, you can use hemp or flax seeds instead.

  • If you are using a different sweetener, you would want to use the equivalent of 1/4 cup honey

  • You can substitute any chocolate chips but the nutrition facts will change slightly.
