Mini Burger Bite Muffins

I don’t know HOW I didn’t try this sooner. I saw a similar recipe on Pinterest and just made a few changes to lighten it up a little.

One of these burger bites has 48 calories and SO MUCH FLAVOR. It’s insane.

People will often ask me what a serving size should be but that’s really hard to answer without knowing what else you’re eating.

To give you an idea, I might have 3 of these at dinner with a side salad and a carb source like a baked potato or homemade sweet potato fries.

OR I may have 2 of these for an afternoon snack. Or 5 of these at dinner if I’m not doing a carb on the side. Serving size is fluid and is different for everyone. Ultimately, I advise you to “listen to your hunger”. If you have 3 and feel like you’re still hungry, have another one. If you get through 2 but feel like you’ve had enough, that’s okay too.

You can really make so many variations of these by just adding different vegetables, cheeses and toppings.

I used bell pepper as my “bun” here but you could also serve these in lettuce wraps or *GASP* in an actual bun.

Oh and just a tip: I love using a silicone muffin pan for recipes like this because it makes clean up so easy and nothing sticks.

Mini Burger Bite Muffins

Serves: 12

Ingredients:

  • Nonstick cooking spray

  • 1 small onion, diced

  • 12 oz 99% Lean Ground Turkey Breast

  • 1/2 cup Liquid Egg Whites

  • 1/2 cup Nonfat Shredded Cheddar Cheese

  • 2 TBSP Parmesan Cheese

  • 2 TBSP Ketchup

Directions:

  1. Preheat the oven to 400F and spray a muffin pan with nonstick cooking spray.

  2. Heat a nonstick pan over medium heat and spray with nonstick cooking spray.

  3. Add diced onion and ground turkey and combine. Break up ground turkey as it’s cooking into smaller pieces.

  4. In a medium bowl, combine egg whites, cheddar, parmesan and ketchup.

  5. Once ground turkey is cooked through, remove it from the stove and transfer the turkey/onion mixture to the bowl with the other ingredients.

  6. Mix all ingredients together and transfer into muffin tin.

  7. Bake for ~15 minutes.

NOTES:

  • These can be stored in the refrigerator for ~3 days.

  • You can substitute any lean ground meat for turkey
