Just when you thought guacamole couldn’t get any better… The addition of strawberry and bacon to a simple guacamole recipe makes this an impressive dish to bring to any party or enjoy at home with a skinny margarita!
I first tried this dish at my favorite Mexican restaurant in Birmingham, Alabama called El Barrio
They often have a seasonal guacamole and most recently, we decided to try their offering of the day and it happened to be a strawberry bacon guacamole that was the perfect balance of salty and sweet.
For whatever reason, I never thought to replicate it but fortunately, one of my friends Lindsay, served it at her Cinco De Mayo party and I NEEDED the recipe and knew I had to share it on here.

Strawberry Bacon Guacamole
Serves: 10
Ingredients:

2 Ripe California (Hass) Avocados, pitted

Juice from 1 lime

1 medium tomato, diced

1/2 jalapeno pepper, stem and seeds removed, diced

1/3 cup fresh cilantro, chopped finely

1 small sweet onion, diced (or 1/2 large red onion)

1 cup sliced strawberries

6 slices turkey bacon, cooked and diced

Salt and Black Pepper to taste
Directions:

Combine all ingredients in a bowl.

Mash to combine ingredients together

Garnish with additional strawberries
