Cauliflower Pizza Crust

This recipe seems so fancy but it couldn’t be more simple. I start with a bag of frozen riced cauliflower like the one below:

I add egg, mozzarella cheese, parmesan cheese and Italian seasoning. Bake it. And I get this gorgeous cauliflower pizza crust.

Why not just buy the cauliflower pizza crust from Trader Joe’s? Because 1 slice has 17 Grams of Carbs! (Mine has 3 grams). Not that there’s anything wrong with eating carbs but if you’re specifically eating CAULIFLOWER pizza it’s most likely because you’re trying NOT to eat as many carbs so it kind of defeats the purpose. 

(Peep those nutrition facts). The carbs come from the fact that the TJ’s crust has corn flour and potato starch in it.

And honestly, this recipe is so easy that it’s not like it even saves you that much time.

One tip: make sure you use PARCHMENT paper and not wax paper because I made this mistake and you literally won’t be able to peel the wax paper off. Just trying to save you from making my mistakes!

This is the perfect low carb pizza for your next wine and pizza night!

Cauliflower Pizza Crust

Serves: 6

Ingredients:

  • 2.5 Cups Riced Cauliflower, Frozen (I used a 10 oz Bag of Birds Eye Original Riced Cauliflower)

  • 1 Egg

  • ½ Cup Shredded Skim Mozzarella

  • 3 TBSP Parmesan Cheese

  • 1/2 tsp Italian Seasoning Blend

Directions:

  1. Preheat oven to 400 F

  2. Microwave frozen cauliflower according to directions. Once cauliflower is done, add it to a strainer and drain.

  3. Transfer cauliflower rice to a dry dish towel and use it to press out as much moisture as possible

  4. Add riced cauliflower to mixing bowl and add in egg, mozzarella cheese, parmesan cheese and seasoning and mix. You can use a spoon or your hands to combine the mixture!

  5. Line a baking sheet with parchment paper and press the dough onto the pan in whatever shape you’d like your crust to be..

  6. Bake for ~25 minutes until the crust is golden brown. Allow crust to cool and then add desired toppings! Bake for an additional 5-10 minutes or until the cheese begins to melt.

Nutrition Facts (per 1 serving): 70 Calories, 5 g Fat, 3 g Carbohydrate, 1 g Fiber, 5 g Protein
