In the spirit of Valentine’s Day, I treated myself to a sweet and decadent (only in taste, not calories) breakfast. I decided to put together a breakfast quesadilla with banana, strawberries and peanut butter (which I do from time to time) but because of the holiday, I decided to throw in some chocolate for good measure and let me tell you, it was a GOOD idea.
This entire quesadilla is only 210 calories and has 18 grams of fiber! Insane.
If you’re not into this for breakfast, you can totally do this as a snack.
Also, I spent a good amount of time cutting my fruit into heart shapes purely for aesthetic reasons and the entire time I was thinking to myself how ridiculous it was but, alas, this social media, image driven society we live in warrants it!
Anyway, enjoy this breakfast on Valentine’s Day, or really… any day!
Peanut Butter, Strawberry, Banana and Chocolate Breakfast Quesadillas
Serves: 1
Ingredients:

Propellant-Free Non Stick Cooking Spray

2 Trader Joe’s Reduced Carb Whole Wheat Flour Tortillas

2 TBSP Powdered Peanut Butter (prepared with water)

1/3 banana, sliced

4 strawberries, sliced
-
1/2 serving (30 chips) Lily’s Chocolate Chips

Optional Garnish: Additional chocolate chips, powdered sugar, more fruit (not included in nutrition facts)
Directions:

Preheat non-stick skillet over medium heat. Spray lightly with propellant-free cooking spray.

Spread 2 tbsp of PB2 (prepared with water) over 1 tortilla then lay the sliced banana and strawberries over the peanut butter and top with the chocolate chips. Place the second tortilla on top to create a “sandwich”.

Once pan is warm, place layered tortilla into pan and allow to heat through. Once chocolate begins to melt, flip the quesadilla to allow both sides to cook.

Once quesadilla begins to brown, remove from heat and serve!

You can substitute the Trader Joe’s Reduced Carb Tortillas with any tortilla that you’d like (if you are looking for other low carb alternatives, try Maria and Ricardo’s, La Tortilla Factory, Tumaro’s, or Joseph’s.

You can use regular peanut butter, almond butter or any nut butter of choice in place of PB2. The PB2 will keep the calories and fat in the recipes low.

Lily’s Chocolate Chips are sweetened with Stevia. Feel free to substitute these with any brand of chocolate chips.
